- Try not to show the interviewee so much. Instead of leaving so many images of the store in silence, use them to cover the interview, the parts where you do it are better.
- I would avoid using the black fades that you have, I think they are not necessary and they always give me the feeling that the video is about to end.
- The interview plans: I think that the most open plan works regularly, there is too much information, table, computers, pictures, he looks too far to the left and I notice him a bit sunk in the chair, as if he needed more height or the table is too high. The one with more foreground I think works better, it's cleaner and you focus more on it. To have a better medium shot, try to clean up distractions, so that the laptop is not in front of you, if you see him a little sunken then perhaps record him standing leaning on the table ...
But that's okay, I think that if you can refine the first two points that I comment on, you will have a much shorter video and therefore more dynamic.
