Thank you for sharing your sketchnotes!
I don't read Italian, so I can't give you specific feedback on the content.
One thing I notice in the first sketchnote is that your written lines are pretty long. I would try to write shorter lines and really make each piece of text more like a square than a long rectangle. It will become easier to place them on the page based on their relationship. The grouping with the green titles for the different topics work well.
Regarding the use of colour in both sketchnotes:
You can use colour more boldly to really highlight important elements (like titles). I would try to use only one or two colours to start (you don't need a different colour per topic, the placement and grouping will be enough to show that they are distinct topics).
Keep up the work and all the best for your next sketchnotes!
